4 ciabatta rolls

1⁄2 cup Mojo Marinade

1⁄2 cup Horseradish Mustard

8 thick slices Swiss cheese

1 large dill pickle, sliced lengthwise into quarters

8 thick slices deli ham

2 cups Pulled Pork

1⁄4 cup sliced pickled jalapeño chile peppers, optional

2 tablespoons unsalted butter, softened

To prepare: Separate the rolls so that you have 8 halves. Drizzle the marinade on the outside, crusty side of each roll and then spread that side with the mustard. Lay the 4 bottom halves of the rolls, mustard side up, on a work surface.

Put 2 slices of cheese on each bottom roll.

Arrange the pickle slices and ham slices on the bottom half of the bread and then top with the pulled pork. Put the jalapeños on the pork, if desired. Top the sandwiches with the top halves of the rolls, mustard-side down, and press gently.

Spread butter over both sides of each sandwich: Because the sandwich is "inside-out," you will be spreading the butter on the traditional inside of the rolls. Put the sandwiches in a heated panini press. Close the press and cook for 5 to 6 minutes, until the sandwiches are toasty and warmed through. (Alternatively, melt about 11⁄2 tablespoons of unsalted butter in a 12-inch nonstick skillet over medium-high heat. When the butter melts, put the sandwiches in the pan, top with a weight or a small skillet, lower the heat to medium, and cook for 5 to 6 minutes on each side, until the filling is hot.) Serve hot.

Grilled Marinated Portobello Mushroom Sandwiches

I used to own a restaurant called McCargo's in Camden. We were located downtown and had a lot of foot traffic from surrounding offices, the courthouse, and local universities. This meant a nice number of "regulars," including Cheryl and Orion, a couple who became good friends of mine. Cheryl liked the chicken salad sandwich, and Orion preferred red meat. He had never had a mushroom sandwich, but when I suggested this one, he tried it. He loved it and ordered it about three times a week from then on. It's loaded with flavor, and the mushrooms satisfy much like meat.
